Tucson has become a creative culinary center… to go along with its warm weather that draws winter “snowbird” visitors along with thousands of students to the popular University of Arizona.
But once the tourists and students head out for summer… the Gastronomic Union of Tucson (GUT) shows off its real talents. This is when chefs from around town focus on native Southwest ingredients — everything from rabbit and quail to acorns and pickled cholla (cactus) buds.
All the dishes during the friendly contest use no butter, no flour, no sugar, no cow meat and no animal fats.
