Dairy products have been among the toughest items to replicate using plant protein. While a new faux meat seems to be introduced daily, developing a realistic ice cream or cheese has been a difficult pursuit.
But Eclipse Foods says its cracked the code on making ice cream that’s replicates and is creamier than the dairy version. Restaurants and other foodservice establishments looking for a true non-dairy ice cream will be the first to introduce the product.
And cheese other dairy products are under development using the Eclipse “base” product that resembles dairy cream.
